Fun fact: Long ago, I actually used to work as a prep-chef in an izakaya in Amsterdam. My favorite part of the job had to be making tebasaki because it's quite delicate and fiddly and a lesser known yakitori in most places outside of Japan. But my ultimate yakitori has got to be tsukune, oishii desu ne!
